Jerk Chicken Recipe
5 -6lbs of Chicken (feed 8 people)
- 3 stalk scallions
- 2 stalk thyme
- 1 medium onion
- 4 clove garlic
- 3 tbsp CK Jerk Seasoning (Hot or Mild)
- 1 teaspoon salt (optional)
- 1 teaspoon black pepper
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons all spice
- 2 teaspoons tomato ketchup
- 1 teaspoon scotch bonnet pepper
- 3 tablespoons vegetable oil
- 3 tablespoons White Vinegar
- 1/4 cup red sweet pepper
- 1/4 cup green sweet pepper
Blend all the ingredients to make a marinate. Apply the marinate to the Chicken and let it rest for 12-24 hrs. Bake or grill to your preference.
