Jerk Chicken Recipe

5 -6lbs of Chicken (feed 8 people)

  • 3 stalk scallions
  • 2 stalk thyme
  • 1 medium onion
  • 4 clove garlic
  • 3 tbsp CK Jerk Seasoning (Hot or Mild)
  • 1 teaspoon salt (optional)
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons all spice
  • 2 teaspoons tomato ketchup
  • 1 teaspoon scotch bonnet pepper
  • 3 tablespoons vegetable oil
  • 3 tablespoons White Vinegar
  • 1/4 cup red sweet pepper
  • 1/4 cup green sweet pepper

Blend all the ingredients to make a marinate. Apply the marinate to the Chicken and let it rest for 12-24 hrs. Bake or grill to your preference.
